O is partially negative
H is partially positive
due to differences in electronegativity
so water is polar and can form strong H bonds
which means lots of energy is needed to overcome bonds
water: cohesion
cohesion is the attraction between water molecules due to strong H bonds
this means animals have surface tension and can walk on water
water: adhesion
water molecules are attracted to other substances
so water sticks to walls of xylem aiding transport of water up plants
water: solvent
water is polar so it dissolved ionic substances
so many minerals and substances can be dissolved in cytoplasm or blood plasma
water: high latent heat of vaporisation
takes lots of energy to turn water to gas
important for thermoregulation as sweating cools animals

lots of energy required to raise 1kg of water by 1degrees
allows life to maintain stable body temp

water freezes to make ice
the hydrogen bonds in ice are further away from each other
so ice is less dense than water
so ice floats
providing habitats for polar bears
and keeping the water under ice warm so water doesnt freeze and fish can survive
