What is the process for making Tokaj Aszu wines?
Starts with base wine, before or after fermentation the aszu berries are macerated in the bases wine. Maceration lasts from 12 to 60 hours. Then the aszu berries and wine are pressed. Then the wine is matured for a period of time in oak.
The amount of aszu berries in the wine determines what?
The amount of sweetness in the final wine.
