What is madreo?
This is a technique for making vino rosado used in DO Tierra de Leon.
First, barrels/tanks are filled with must to begin the fermentation process, then whole, uncrushed bunches are added to constitute ~10% of the total volume. The must & bunches ferment together. The whole berries undergo an internal enzyme-driven/biochemical fermentation that converts sugar to alcohol (~2%) and creates an explosive bouquet of aromatics.
This slow & easy fermentation results in a wine that is not overtly sparkling but has a slightly prickly mouthfeel.
Prieto Picudo responds very well to this method & the highest possible proportion of the grape is required to produce the best examples.
Where is DO Tierra del Vino de Zamora located?
This wine region lies along the western border of the Rueda & Toro DOs.
