Rotating a glass rack when half of the glasses are empty so that the empty portion is in the back
Rack Around
To call a food item to the expeditor before it is rung in to expedite the cooking process
Precall
A special need for a table. For example, lemons, white sugar, etc. It is a priority.
Guest Request
The plating/ticket window in which tickets and hot food / entrees are exchanged
Hot Expo
One is at the Hobart and another server approaches with dirty dishes saying this phrase meaning the first person may leave the area and their dishes there. The server leaving must always say “What do you need?” helping the other teammate out.
Drop and Go
You have one hand to tun one item
One Easy
A cloth. Not a “napkin”
Linen
To clear a table and take all items to Hobart so that the table can be wipe set to seat again.
Bus
The floor in expo needs to be swept with a broom kept by the Hobart

The expeditor is calling for a server to take entrees to a table
Hot Food Run
A cloth. Not a “rag”
Towel
The expeditor is calling for a server to take drinks from service bar to table
Drink Run
One does not have enough “hands” to fully manicure a table and needs another server to help them
Follow Manicure
Someone is behind you. Use caution when stepping back.
On Your Back/Behind
Sanitizing a table, placing roll ups on it, an placing condiments in the appropriate place. A wipe set table is ready to be seated.
Wipe Set
“In Total.” “5 tables all day” would mean 5 tables in the dining room are ready to be seated.
All Day
The mens and ladies room needs to be checked. The expeditor call for a mens and ladies room every 20 minutes when a server grabs a chit and checks off the items.

A server has an updated guest check that is ready to be given to the guest to pay at any time
