What steps should a service staff member take when a guest informs them of an allergy or food intolerance?
Step 1 - Let the guest know that we are happy to assist with ordering, and confirm their choices are free from the allergic ingredient. Also, discuss with the guest every item that is order for the table that may contain the allergic ingredient.
Step 2 - Always get your manager involved and double check on the Allergy Quick Guide, or in each recipe in the Recipe System with your manager, to ensure the guest receive the proper information. If there are any questions that you don’t know the answer to, tell the guest you can’t be sure an item is free from their allergic ingredient.
Step 3 - Ring the item with the proper Allergy Modifiers in the POS system.
Step 4 - Runners should always inform guests of every items that contains the ingredient that is delivered to the table.
