Explain the process of gelatinisation
A
- Starch granules are heated at 50 - 60 degrees celcius
- Starch granules become swollen at 60 degrees celcius
- At 80 degrees celcius, starch granules burst and starch is released
- At 100 degrees celcius, the liquid thickens and gelatinises

How do you make white sauce?
A
- Melt butter in a saucepan.
- Add salt and pepper
- Stir constantly until mixture is smooth and bubbly
- Gradually stir in milk. Constantly stir, boil for 1 minute
