Causses soiltype is more limestone-based and up high on the plateau. Wine produced here is considered longer-lived and a more traditional style of Cahors meant for long keeping.
Côteaux is made of mostly sand and gravel terraces between the plateau (Causses) and the river. Wine from the Côteaux is considered earlier maturing and meant to be drunk young.
