You use them to make it easier to see at a glance how much of the input energy is being usefully employed compare to how much energy is being wasted.

Describe in words the structure of a Sankey diagram.
A
Arrows pointing down are usually wasted energy unless told otherwise. Arrows pointing straight are usually useful energy.
In a detailed Sankey diagram the width of each arrow is proportional to the number of joules it represents.
