Panna Sauce
Cream whipped with salt and white pepper.
Tomato Sugo
Hand-crushed tomatoes, onions, garlic, fennel seed, chili, butter and extra virgin olive oil.
Bolognese Sauce
A traditional, meat-based ragu. It consists of ground beef, prosciutto, ground pork, celery, onions, carrots, garlic, white wine, tomatoes, chicken stock, milk, oregano, thyme and nutmeg.
Acqua Pazza
Garlic, red onion, chili flakes, white wine, tomatoes, salt, sugar, fennel seed, basil, oregano and Calabrian chili.
Burro Fuso
Every pasta contains this sauce. It’s and Italian-style beurre monté (light, butter sauce) consisting of butter, garlic and bay leaves.
Parmesan Cream Sauce
Half and half thickened with a light roux with thyme, garlic, nutmeg and Grana Padano cheese.
Marinara Sauce
San Marzano style tomatoes, EVOO, butter, onions, garlic, fennel seed, chili flake, sugar, dry oregano, S&P.
Pizza Sauce
Italian-style tomatoes, garlic, chili, oregano, extra virgin olive oil, salt and sugar.
Lemon Aioli
Egg yolks, blended oil, lemon zest, lemon juice, sugar and salt.
Olive Tapenade
Castelvetrano olives, roasted peppers and olive oil.
Giardiniera
Pickled and lightly spiced Italian vegetables (carrots, celery, onion, cauliflower and pickled peppers).
Creme Fraiche
A French-style sour cream; ours is made with lemon zest.
Saba
Saba is an Italian condiment made from grape must (the unfermented juice of grapes) that is cooked over wood fire for 30 hours or more in open vats. The result is a syrupy, sweet condiment that tastes of raisins and prunes.
Apricot Mostarda
Golden raisins and dried apricots cooked with white wine, sugar and Dijon mustard.
Tomato Jam
Shallots, garlic, sugar, vine-ripe tomatoes, thyme and honey banyuls vinegar.
