The lemon twist; the acidity present in the lemon twist will cause the denaturation of the protein casein (found in milk and cream). This will cause the once spaced-out micelles (groups of proteins) to coagulate (curdle), and you’ll be left with the beginning stages of cheese in your espresso.

What is the difference between gelato and American ice cream?

A

Gelato has more density than American ice cream because it contains less butterfat and is more slowly churned, resulting in less trapped air. Due to the density, the flavor of gelato has the potential to be more intense than that of American ice cream. Gelato also has a higher sugar content. Finally, gelato is stored and served at warmer temperatures because the lower fat content and denser consistency would make it too hard to eat otherwise.
