Braised Beef Short Ribs served with ricotta gnocchi (the gnocchi is dressed with a light parmesan cream sauce and tossed with arugula). Topped with horseradish gremolata and toasted breadcrumbs.

Fusili pasta, made from corn and brown rice.
Describe the Fall “Lasagna”
Not your traditional lasagna. This is free formed – two pasta sheets layered with ricotta cheese, roasted butternut squash, mushrooms, sautéed swiss chard, pancetta, and garlic in a brown butter emulsion. Topped with crushed candied hazelnuts.
What type of noodle is Mafaldine?
Malfadine is an 8” noodle that is roughly a 1/2” wide and has ruffled edges. The pasta is named after an Italian Princess, born in the 1920’s. You can describe it to the Guest like a “ruffled fettuccine”.
