Garlic Cream Sauce
Garlic, lemon juice, chili flakes, salt and white pepper.
Bolognese Sauce
A traditional, meat-based ragu. It consists of ground beef, ground pork, Italian sausage, salumi scrap, celery, onions, carrots, garlic, white wine, tomatoes, chicken stock, milk, oregano, thyme and nutmeg.
Acqua Pazza
Garlic, red onion, chili flakes, calabrian chili paste, white wine, tomatoes, salt, sugar, fennel seed, basil and oregano.
Burro Fuso
Every pasta contains this sauce. It’s and Italian-style beurre monté (light, butter sauce) consisting of butter, garlic and bay leaves.
Parmesan Cream Sauce
Heavy cream, water, onions, garlic, white wine, grana padano, parmesan ribs, basil, thyme and salt.
Marinara sauce
San Marzano-style tomatoes, extra virgin olive oil, butter, onion, garlic, fennel seed, chili flake, sugar, dried oregano, salt and pepper.
Pizza Sauce
Italian-style tomatoes, garlic, chili, oregano, extra virgin olive oil, salt and sugar.
Lemon Aioli
Egg yolks, blended oil, lemon zest, lemon juice, sugar and salt.
Olive Tapenade
Castelvetrano olives, roasted peppers and olive oil.
Pepper Relish
Piquillo peppers, pepperoncinis, calabrian chili paste, Castelvetrano olives, red onion, red wine oregano vinaigrette, salt and black pepper.
Lemon Crème Fraîche
A French-style sour cream; ours is made with lemon juice and lemon zest.
Saba
Reduced grape must; sweet and mildly acidic (tastes of raisins and prunes).
Apricot Mostarda
Golden raisins and dried apricots cooked with white wine, sugar and Dijon mustard.
Tomato “Jam”
Shallots, garlic, sugar, vine-ripe tomatoes, thyme and honey banyuls vinegar.
Chicken Jus
Celery, carrots, garlic, tomatoes, thyme, bay leaves, dried mushrooms and chicken stock.
