What are the aging requirements of Rhum Agricole?
Rhum agricole is a French style, produced mainly on Martinique—the Martinique AOC can claim to be the southernmost Appellation d’Origine Contrôlée in France, despite its location in the sunny Caribbean! Rhum agricole may only be produced from sugarcane juice; column distillation is mandated in Martinique.
In terms of élevage, the spirit must spend a minimum of 8 weeks in aging in tank prior to bottling to qualify as Rhum Agricole Blanc. After that, there are a variety of barrel-aged designations: “élevé sous bois,” which requires a minimum of 12 months in oak barrels, “Rhum Ambré” or “Rhum Paille,” which require 18 months in oak barrels, and then “Vieux” or “Hors d’Age,” which must spend at least three years in oak barrels. At this point, more traditional French spirit aging designations may be used: VO for a minimum of 3 years in oak barrels, VSOP for a minimum of 4 years in oak barrels, and XO for a minimum of 6 years in oak barrels.
