Dry, medium intensity, medium intensity, medium alcohol, medium body, flavours mirror aromas, plus a subtle toast note, with the tropical notes more the forefront of the palate, ripe & slightly confected character, simple, medium finish
This is a good wine:
- The wine is balanced as shown by the
- Not suitable for further ageing
- For a very good wine, I’d expected a better-focused aroma/flavour definition.
- It’s not a very good wine as it lacks aroma/flavour concentration.

citrus (lime, lemon), green fruit (pear), tropical (green pineapple), floral (white blossom, jasmine), oak (toast, nutmeg), leafy, dried herbs, wet stones & wet wool; it has a good aroma definition and a ‘just ripe’ fruit character.
Dry, medium (+) acidity, medium (-) body, medium alc, medium (+) intensity, flavours mirror aromas, persistent medium (+) finish (predominant notes are wet stones, dried herbs & green pineapple).
Very good wine, suitable for further ageing.

Citrus (lemon zest), green fruits (green apple, pear), peach, floral (orange blossom, honeysuckle), tropical (green pineapple, green mango), wet stones, wet wool, nutmeg, fennel, cloves, dried apricot, raisin, honey; well-defined aromas and great concentration
Dry, high acidity, medium alc, medium (-) body, pronounced intensity, flavours mirror aromas, long, complex finish with honeyed walnuts notes.

Montmains: one of the 40 named 1er Crus climats in Chablis;
Grapes for this wines came from Les Butteaux, which is a climate on its own right but can use the Montmains 1er Cru name; the wines are a leaner & lighter expression of Chardonnay; the Kimmeridgian soils here differ slightly as they are shallow and stony;
Fermentation time: 3 months, with natural yeasts and malolactic conversion happened with naturally occuring bacteria.
The wine is vegan.
Oak maturation: 12 months in 600 L barrels, on the lees.

Dry, linear medium (+) acidity, medium alcohol, medium body, medium (+) intensity, medium (+) finish, which is fresh and zesty with a tropical hint.
100 chadonnay, from a combination of different plots
This is their entry level wine
elevage of 10 months in a combination of stainless steel and oak vats
minimum or no filtration.
