What are the 5 food tests
A
- Test for reducing sugars
- Test for non-reducing sugars
- Test for starch
- Test for lipids
- Test for proteins

What is the test for reducing sugars
A
- Add 2cm of the food sample to a test tube
- Add an equal amount of benedicts reagent
- Heat the mixture gently in a water bath for 5 minutes
- Brick red precipitate = Reducing sugar presence

What is the test for non-reducing sugars
A
- Add 2cm of the food sample to a test tube
- Add an equal amount of benedicts reagent
- Heat the mixture gently in a water bath for 5 minutes
- No colour change = Reducing sugar not present
- Add another 2cm of food sample to 2cm of HCL. HCL hydrolyses any disaccharide
- Add sodium hydrogen carbonate to neutralise pH. Benedicts doesnt work in acidic conditions
- Re-test with benedicts in a water bath for 5 minutes, brick red = Non-reducing

What is the test for starch
A
- Add 2cm of the food sample to a test tube
- Add 2 drops of iodine and shake
- Starch = Blue/Black colouration

What is the test for lipids
A
- Add 2cm of the food sample to 5cm of ethanol in a clean test tube
- Shake the test tube to dissolve lipids
- Add 5cm of water and shake
- Cloudy emulsion = Lipid
- Repeat with water for a control

What is the test for proteins
A
- Place food sample in a test tube
- Add an equal amount of sodium hydroxide solution
- Add a few drops of dilute copper(II) sulfate solution and mix gently
- Purple colouration = Protein, blue = No protein.
