- some major outbreaks have been caused by deliberate illegal adulteration
- e.g. melamine, rapeseed oil

Describe the beef food chain and the influence of supermarkets

A

At farm level the beef chain is not simple

There are a variety of different farming systems and every farm is different

Any control process will have to work in every farm

From point of slaughter the route to market will vary

Supermarkets will often seek to direct purchase from a dedicated abattoir under contract

Farms will have to supply to that abattoir of choice

Describe the dairy food chain

A

The dairy farms are generally similar to beef in terms of operation

Majority of milk is taken from farm by milk processor ( Arla, Dairy Crest etc) and then sold on further

Supermarkets typically seek to define a direct supply with farmers and/ or processors committing to supply milk on a contract
