Enzymes Flashcards
Carbohydrases
Convert starch into sugar syrup
Proteases
Pre digest baby food protein
Isomerases
Convert glucose syrup into fructose syrup
Much sweeter
Small quantities needed
For slimming foods
Amylase
Produced in salivary glands, pancreas and SI
Breaks down starch into sugars in mouth and SI
Proteases
Produced in stomach, pancreas, and SI
Analyse breakdown of proteins into amino acids
In stomach and SI
Lipases
Produced by pancreas and SI
Break down lipids into fatty acids and glycerol in SI
Hydrochloric acid
Produced in the stomach
Enzymes in stomach work best in acidic conditions
Bile
Liver produces it
Stored in gall bladder before being released into SI
Neutralises acid from stomach as enzymes in SI work best in alkaline conditions
Also emulsifies fats (large drops into smaller droplets) increases surface area of fats for lipase enzymes to act on
