The optimum temperature is where enzymes work the best and have the fastest rate of reaction. after this point enzymes denature permanently changing the shape of the active site and so it can no longer act as a catalyst for the raction

enzymes have an optimum pH. when outside of the optimum activity decreases and active sites denature
