Rim a martini glass with a fresh lemon wedge and coat the outside of the glass with sugar. Bang against your hand to remove excess sugar. Add all ingredients to a mixing glass. Add ice, shake, and double strain into the sugar-coated martini glass.

Separate the egg white from the egg and drop in a mixing glass. Add all other ingredients to a mixing glass. Using cube ice or 2” ice cube, shake hard to froth up the egg whites. Double strain into a chilled couple glass. Spray the angostura bitters through the stencil provided to create the design atop the foam.
Note: With the foam, this drink should fill the coupe glass to the top. If you come up short you may not be shaking hard enough.
