Glass: 15oz Tapered Rocks Glass
Place the 2 oz of grapes in the bottom of a 15oz tapered rocks glass. Muddle well until so you can extract flavor, texture, and a little color from the skin. Add all other ingredients to the glass. FIll 1/3 of the way with crushed ice and swizzel briefly.

3/4oz Rye
3/4oz Meletti Amaro
3/4oz Cynar
3/4oz Lemon Juice
1/4oz Simple Syrup

Garnish: Lemon Twist
Add all ingredients to a mixing glass. Add ice, shake, and fine strain into a chilled coupe. Sprat Laphroaig 10year mist over the top of the drink. Express the lemon twist over the drink and place on the rim.
Cardinal Sin
1 1/2oz EW
1 1/2oz Pineapple Juice
3/4oz Campari
1/2oz Lime Juice
1/2oz Simple Syrup
3 Dashes Orange Bitters
Glassware: Collins
Garnish: Pineapple Leaf skewered, Luxardo Cherry to Pineapple Wedge
Fill a Collin’s glass with cube ice. Add all ingredients to a mixing glass. Add ice, shake hard, and strain over the fresh ice in the Collin’s glass. Place a fresh, healthy pineapple leaf so its sticking 2 inches above the rim of the glass. Skewer a luxardo cherry using a bamboo stick into the center of pina wedge. Place the pina wedge on the rim of the glass. Serve with a long black straw.
Cider Lowball
2oz Bourbon
3/4oz Apple Cider
3/4oz Lemon Juice
3/4oz Vanilla Bean Syrup
1/4oz Benedictine
1 Slice Granny Smith Apple
1 Cinnamon Stick
Glass: Large Rock
Garnish: Apple stick & Cinnamon Stick
Shake all ingredients with ice and strain over fresh one inch ice cubes in large rock glass or tumbler style glass. Granny Smith apple slice and cinnamon stick for garnish. Grate fresh nutmeg over the top and serve.
El Mariachi
1oz DEl maguey vida mezcal
1oz House teq
3/4oz lemon juice
1/2oz campari
1/2oz agave syrup
1 medium strawberry
10 mint leaves
Glassware: Large rock (15oz)
Garnish: Mint Sprig
Muddle the mint in the bottom of a mixing glass. Add the strawberry and muddle. Add all other ingredients. Add ice, shake and fine strain into a large rock glass. Fill with crushed ice, garnish with a mint sprig and serve w a short black straw.
Essex Street
- 2 oz Well Gin
- .75 oz Lime Juice
- .5 oz elderflower cordial
- .5 oz simple
- 3 drops saline solution
- Glassware

- Garnish
- Thin sliced cucumber
Add 2 sprigs of dill to a mixing glass. Muddle thoroughly. Tear 3 cucumber slices and drop in. Briefly muddle. Add all other ingredients. Add ice, shake hard, and double strain into a coupe. Float a cucumber slice with a dill sprig laid across it.
Gin Gin Mule
- 2 oz house gin (prairie gin)
- 1 oz lime juice
- 0.75 oz simple syrup
- 2 oz regatta ginger beer
- 10 mint leaves
- Glassware
- 16oz Beer Glass
- Garnish
- Mint Sprig & Long Black Straw
Tear up the mint leaves several times, and drop in a large beer glass. Muddle. Add all other ingredients. Fill halfway with crushed ice and stir. Top with more crushed ice creating a cone effect. Smack the mint sprig to pand place inside the glass. Serve with a long black straw.
Lion’s Tail
- 2 oz EW
- .75 oz lime juice
- .75 oz simple
- .25 oz bitter truth pimento dram
- 1 dash angostura bitters
- Glassware

- Garnish
- Lime twist
Add all ingredients to a mixing glass. Add ice, shake vigorously, and fine strain into a chilled coupe glass. Express the oils from a lime twist over the drink and place in.
New York Sour
- 2 oz EW
- 1 oz Lemon Juice
- .75 Simple
- 1 oz Malbec
- Egg white
- Glassware
- Large Rock Glass
- Garnish
- Luxardo Cherry
- Orange Twist
Fill a large rocks glass 2/3 full with fresh ice. Add all ingredients, except the red wine, to a mixing glass. Add ice and shake hard. Strain over the fresh ice in a large rocks glass/bucket. Express the oils from an orange twist over the drink. Skewer a luxardo cherry through the orange twist and place in along side. Insert a short black straw. Lastly, layer the Malbec over the drink and serve.
Oaxaca (Tequila Old Fashion)
- 2 oz Reposado Tequila
- .25 oz Simple OR Agave
- 2 dash Orange bitters
- 2 dash angostura bitters

Picadilly
- 1 oz Pimm’s No. 1
- 1 oz Aperol
- 0.75 oz lemon juice
- 0.5 oz simple syrup
- 2 oz Fever tree tonic
- 3 cucumber slices

- Garnish
- 3 cucumber slices
Pour 2 oz tonic in the bottom of the Collins glasss and fill with ice. Then, muddle 3 cucumber slices in the bottom of a mixing glass. Add pimm’s, Aperol, lemon juice and simple syrup. Add ice, shake and fine strain into the collins glass. Place 3 fresh cucmber slices down the sides of the glass so they are dispersed. Top with more ice if necessary. Served with a long black straw.
Poinsettia
- 1.5oz Well Gin
- 1 oz Cranberry Syrup
- .75 oz lime juice
- .5 oz simple

- Grated Nutmeg and Orange Twist
Add all the ingredients to a mixing glass. Add ice, shake, and fine strain into a chilled coupe. Grate fresh nutmeg overtop, express the oils from an orange twist over the drink and place on the rim.
Queen’s Park Swizzle
- 2 oz Cruzan rum
- 1 oz simple syrup
- .75 oz lime juice
- 10 mint leaves
- Glassware
- 16oz beer glass
- Garnish
- Angostura bitters and mint sprig
Add the mint leaves to a 16oz beer glass. Muddle until a paste-like consistency. Add rum, simple and lime juice. Fill halfway with crushed ice and swizzle with your bar spoon. Add more crushed ice to the top of the glass but not past the rim. Add 6 dashes angostura bitters creating a layer on the top. Top with more crushed ice making a cone like effect. Garnish with Mint Sprig and long black straw.
Sangrita
- 1.5 oz Rancho Allegra Silver Tequila
- .5 oz Del Maguey Vida Mezcal
- 1 oz Lime Juice
- .5 oz Agave Syrup
- 5 drops Saline Solution WHERE TO PUT THIS?
- .5 oz Catena Malbec
- Glassware
- Large Rock Glass

- grapefruit slice dusted with ancho chili salt
Add the tequila, mezcal, lime juice and agave to a mixing glass. Add ice, shake and strain over fresh ice in a large rocks glass. Layer the red wine over the top of the drink. Float the grapefruit slice and sprinkle with ancho chili salt.
Solana Beach
- 0.5 oz St. Germain
- .75 oz orange juice
- 1 dash orange bitters
- 4 oz Bele casel Prosecco
- Glassware
- Champagne Flute

- Orange Twist
Add the st. Germain, OJ, and Orange bitters to a champagne flute. Fill with Prosecco to 1 inch from the rim of the glass. Express the oils from the orange twist over the drink and drop in.
Smoke Signal
- 2 oz maguey vida mezcal
- .25 oz agave syrup
- 3 dashes orange bitters
- 2 dashes angostura bitters

- Grapefruit twist
Add all ingredients to a small, chilled rocks glasss. Lower in a large 2” ice cube and stir until chilled. Express the oils from a grapefruit twist over the drink and place in.
The Passerby
- .75 oz Germain Robin Brandy
- .75 oz Limoncello
- .75 oz Meletti Amaro
- .75 oz Lemon Juice
- 1 oz Prosecco
- Orange flower Water
- Glassware

Spray the inside of a chilled coupe with orange flower water. Add the brandy, limoncello, amaro, and lemon juice to a mixing glass. Add ice, shake, and fine strain into the chilled coupe glass. Top with Prosecco. Express the oils from an orange twist over the drink, and using the twist, give the drink a quick stir to incorporate the Prosecco.
The Spritz
- 1 oz Aperol
- 1 oz Cocchi Americano Rosa
- 2 orange slices

Fill a Collin’s glass with 4 kold draft ice cubes and 2 orange slices, stacked so they are not Both at the bottom of the glass. Add Aperol and Cocchi Americano Rosa to a mixing glass. Fill w ice and stir w a bar spoon to introduce a little water into the cocktail. Strain into Collin’s glass. Top w Prosecco and give a quick stir w a bar spoon. Add more ice if necessary to top off. Express the oils from the orange twist over the drink, curl and place in. Serve w a long black straw.
Collins
2oz Spirit (Gin, Rum, Whiskey, etc.)
1oz Lemon Juice
3/4oz Simple Syrup
1oz Club Soda
Garnish: Orange Twist & Luxardo Cherry
Glass: Collins
Add all ingredients to a Collins glass. Add ice and stir. Top with club soda. Served with a long black straw.
Sour
2oz Spirit (Gin, Rum, Whiskey, etc.)
1oz Lemon Juice
3/4oz Simple Syrup
1 Egg White
Garnish: Angostura Bitters with stencil
Glass: Chilled Coupe
Separate the egg white from the egg and drop in a mixing glass. Add all other ingredients to a mixing tin. Using cube ice or a 2” ice cube, shake hard to froth up the egg whites. Double strain into a chilled coupe glass. Spray the angostura bitters through the stencil provided to create the design atop the foam. NOTE: With the foam, this drink should fill the coupe glass to the top. If you come up short you may not be shaking hard enough.
Absinthe
2oz St George Absinthe
Carafe of 6oz of Water
Small Rocks glass filled with ice and teaspoon
One bar spoon sugar
Place a teaspoon across the top of a highball/Collins glass. Add one bar spoon sugar to the teaspoons. Pour approximately 1/4oz Absinthe over the sugar in the spoon and the remainder into the bottom of the glass. Light the sugar on fire using a match. Once the sugar has melted, extinguish it using the carafe of water. Continue pouring the water over the sugar until all the sugar has moved into the glass. Add ice and stir.
Amaretto Sour
2oz Amaretto
1oz Lemon Juice
3/4oz Simple Syrup
1 Egg White
Garnish: Angostura bitters with stencil
Glass: Chilled Coupe
Separate the egg white from the egg and drop in a mixing glass. Add all other ingredients to a mixing tin. Using cube ice or a 2” ice cube, shake hard to froth up the egg whites. Double strain into a chilled coupe glass. Spray the angostura bitters through the stencil provided to create the design atop the foam. NOTE: With the foam, this drink should fill the coupe glass to the top. If you come up short you may not be shaking hard enough.
Americano
1 1/2oz Campari
1 1/2oz Sweet Vermouth
2 Orange Slices
2oz Club Soda
Garnish: Orange Slice
Glass: Collins Glass
Fill a high ball/Collins glass with ice. Add all ingredients and stir. Top with club soda. Served with a long black straw.
Aperol Spritz
2oz Aperol
3oz Prosecco
1oz Club Soda
Garnish: Orange Twist
Class: Collins
Add Aperol to a Collins glass. Fill with ice and top with prosecco. Add more ice if necessary. Add the soda. Express the oils from the twist over the drink and drop in. Served with a long black straw.
Aviation
2oz House Gin
3/4oz Lemon Juice
3/4oz Luxardo Maraschino Liqueur
5 drops Rothman & Winter Creme de Violette
Garnish: Luxardo Cherry
Glass: Chilled Coupe
Add all ingredients to a mixing glass. Add ice, shake, and double strain into a coupe glass.
Bees Knees
2oz House Gin
3/4oz Lemon Juice

Bijou
1oz House Gin
1oz Sweet Vermouth
1oz Green Chartreuse
1Dash Orange Bitters

Glass: Chilled Coupe
Add all ingredients to a mixing glass. Add ice and stir until the glass feels ice cold. Strain into a coupe glass.
Black Russian
1 1/2oz House Vodka
3/4oz Kahlua
Garnish: None
Glass: 8oz Small Rocks
Pour all ingredients over cube ice in a small rocks glass. Stir and serve.
Blood and Sand
1 1/2oz House Scotch
1/2oz Sweet Vermouth
1/2oz Cherry Heering
1//2oz Orange Juice
Garnish: Luxardo Cherry & Orange Twist
Glass: Chilled Coupe
Add all ingredients to a mixing glass. Add ice, shake and fine strain into a coupe glass. Skewer a Luxardo cherry and place in the glass. Express the oils from the orange twist over the drink and place in zest side up.
Bloody Mary
2oz House Vodka
6oz house made Bloody Mary mix*
Garnish: Lemon Wedge & Skewered Olive/Peppadew Pepper/Olive
Glass: 15oz Tapered Rocks Glass
Pour Vodka and mix over ice in a 15oz Tapered Glass.
Bloody Mary Mix:
2oz Dimitri’s Bloody Mary Mix
2oz Lemon Juice
2oz Grated Horseradish(loosely packed into a 2oz jigger, not by weight)
Add all ingredients to a 32oz container. Fill with 28oz tomato juice. Store for 1hour at room temperature then refrigerate.
Boulevardier
1 1/2oz House Bourbon
1oz Sweet Vermouth
1oz Campari
Garnish: Orange Twist
Glass: Spiegelau Rocks Glass
Place a large 2” clear ice cube in chilled Spiegelau rocks glass. Add all ingredients and stir for one minute. Express the orange twist over the drink and place in.
Bramble
1 1/2 oz House Gin
3/4oz Lemon Juice
3/4oz Creme de Mure
1/2oz Simple Syrup
Garnish: Skewered Black Berry and Basil Leaf
Glass: 15oz Tapered Glass
In a 15oz Tapered glass, muddle two torn basil leaves, then muddle two blackberries. Add all remaining ingredients, fill halfway then crushed ice and swizzle. Top off with crushed ice creating cone effect. Garnish with basil leaf, skewered blackberry, and short black straw.
Brandy Alexander
1 1/2oz House Brandy
3/4oz White Creme de Cacao
3/4oz Half & Half
Garnish: Freshly Grated Nutmeg
Glass: Coupe
Add all ingredients to a mixing glass. Add ice, shake hard to create a froth, and double strain into a coupe glass. Grate nutmeg over top.
Bronx
2oz House Gin
1/2oz Dry Vermouth
1/2oz Sweet Vermouth
3/4oz Fresh Orange Juice
