Refers to the smell or bouquet of food. Eg - smell of melted cheese or coffee smell
Flavour
Is the combination of taste and aroma of food. Eg- bitter apple strudel and sour lemon tart
Mouth-feel
Refers to the feel or texture of food in the mouth. Eg- goat which melts in the mouth and crisp pair
Sensory properties
Characteristics of foods as they are perceived by the 5 senses. Eg- smell: aroma of food… And appearance: how good it looks
Taste
Sensation registered by the taste buds or papillae of the tongue. Eg- sweetness of various fruits and bitterness of leafy greens
Texture
Response to the tactile sense or the structural composition of food. Eg- spiky pineapple skin or rough kiwi fruit skin
The design process
Series of steps or stages that are followed to create a new product. Eg- design ideas and options or evaluate and answer questions
Appearance
Can include the colour, shape, size and texture of food. Eg - bright red apple and golden brown toast
