What is Lambic beer?
From Belgium, spontaneous fermentation in open-top containers using wild yeast
Blended and aged up to 3 years before released.
More sour.
What is Gueze?
Mixing 1-year lambic with 2/3-years aged beers, fruitier.
What is kriek?
Lambic re-fermented with sour morello cherries
What is framboise
Lambic re-fermented with raspberries
Difference between ale and lager
Ale: Top-fermenting yeast. Warmer temperature. Fruitier, richer flavour. Fermentation is shorter.
Lager: Bottom-fermenting yeast. Colder temperature. Delicate, cleaner flavour. Fermentation is longer.
What are the types of Ales
Pale Ale: bronze/copper coloured
Bitter Ale: well-hopped ale with good acidity, hoppy bitterness finish
Porter: dark in colour, strong in flavour but lighter to stout
Stout: extra dark, almost black. Made with highly roasted malts
Wheat Beer/Weissbier: made from wheat, tart spicy palate. Unfiltered
Styles of Lagers
Pilsner: golden colour, floral aroma, dry finish
Bock: Strong beer. Made from barley. Can be golden to very dark brown. Made in winter/spring
What is Scrumpy
Higher strength Cider/Perry. Often unfiltered. Can be still/sparkling
