Structure of starch
It has different forms of polysaccharides amylose a straight chain polymer with α-1.6 linkage and amylopectin branched structure with α-1.6 and α-1.4 linkages
Structure of cellulose
Consists of straight chain polymer that has a β-1.4 linkage. The β-1.4 can be hydrolyzed by the enzyme cellulase, which is absent in most animals
