What happens to yeast during slow second fermentation and ageing - it digests itself
What is the removal of the yeasty deposit called?
Disgorgement. Bottles are RIDDLED so yeast cells slide into the bottle neck. The neck gets frozen and the plug pops out. Otherwise the wine would be hazy.
How does the yeast come out in the traditional method?
Top bit gets frozen and it is blown out by the increased pressure.
What is dosage?
The amount of sugar (solution) added after yeast removal
What does the term Brut mean?
DRY
What do you call the method of removing yeast that relies on using a stainless steel tank and a filter (instead of bottle disgorgement)?
The transfer method
What flavors do you develop in a sparkling wine because of bottle fermentation?
Yeasty, bready and biscuit

It is an AC in France and the only region that can label a bottle as champagne

Pinot Noir, Meuniere, and Chardonnay
What is the flavor profile of a premium Champagne?
Green and ctirus fruit notes (green apple, lemon) with high acidity and bready notes from yeast autolysis (bread, biscuit, toast)
