Prosecco is made from Glera (aka Prosecco) Grape, in Veneto, Italy (Northeast). This is a non-vintage Prosecco, made in a dry style, using a method of winemaking called “Charmat” or “Tank Method”, which is an inexpensive way to make large volumes of sparkling wine in a style to be consumed young.

87% Pinot Noir and 13% Chardonnay.
This sparkling rose from South Africa utilizes the traditional method, or method champagnoise.
The wine is floral and elegant with a crisp and vivid acidity.
The classic varietals of Pinot Noir and Chardonnay are hand-picked in the cool of the night. This wine is bottle fermented on the lees and everything is done by hand. Bone dry, this rose goes very well with our tuna tartare as well as the new salmon mezza plate

Orange Wine in a slightly oxidative style, made from the Spergola grape, which is native to Emilia-Romagna in Italy. 2018 Vintage. The wine is a very pale orange color with hints of tangerine, hazelnut and honeysuckle. A great ‘Intro to orange wine’ style.
Name the Grape, Region, Style and Vintage of the Elephante Rose wine.
This Rose is made from a combination of traditional grapes from the Bardolino region of Italy (located inside the Veneto) - Corvina, Molinara, and Rondinella.
These three grapes are the grapes used to produce Amarone (A full-bodied dry or off-dry Red), and it’s little brother, Valpollicella ( A medium-bodied dry red). If you can’t remember the names of all the grapes, think of it as a “declassified Amarone Rose.”
The wine is made in a dry, very approachable style.

Elephante White is made from the Arneis grape, which is home in Piedmont (Northwest). The specific region in this case is Roero.
The grape is typically made into fresh, un-oaked styles of wine, which is the case with our Arneis.

Savatiano is produced in Attica, Greece (the region of Athens) by Markou Winery. We serve this wine instead of Sauvignon Blanc currently as it is more in keeping with our Mediterranean theme and happens to be delicious and approachable.
Savatiano is Greece’s most widely planted grape, which you likely do not know as most of it has been used to blend into commercial wines, including Retsina.
Bottled on it’s own, Savatiano is crisp, dry and bright with citrus and verdant notes. Comparable to a cooler climate Sauv Blanc (not New Zealand or California, but maybe French).
It’s also reminiscient of Gruner Veltliner in ways - the wine’s profile is quite green - lime, lime zest, dandelion greens, minerality and a little smoke.
Ideal with fish and shellfish as well as salads and even lighter white meats or to sip on its own.
2018 vintage.
Name the Grape, Region, Style and Vintage of the Lioco
Chardonnay from Sonoma County.
It’s a very middle-of-the-road style of chard- not too buttery (but a little), not too oaky (but a little), high acid but extremely balanced, and dry. Leaner than many California chardonnay and definitely more food friendly.
It’s got green apple , fresh golden apple notes, green pear, lemon blossoms, and a touch of stony minerality to carry it all through.
Vintage is 2018.
Name the Grape, Region, Style and Vintage of the Copain Pinot Noir
Pinot Noir from the Sonoma Coast, California.
Generally speaking, Pinot Noir makes red wines with high acidity and lower tannin in fruit-forward style without a tremendous amount of weight or body.
Aromas are typically informed by cherry (sweet, sour, red, black, etc), mushroom, olive and earthy qualities. The palate isi similar in most cases.
Pinot Noir will sometimes be aged in oak, but its fruit qualities are best enjoyed when not too dressed up in new oak flavors.
Pinot Noir is versatile when served with food - chicken, red meat, hearty veggies, smoked fish are all appropriate and fun pairings.
This particular wine is not particularly fruity, done more in a savory style. Red cherry, caraway seed and some subtle black and white pepper notes, plus a little grippy wood tannin from barrels.
Vintage is 2017.

This wine is made from Barbera grapes in Alba, Piedmont.
Barbera is a wonderful restaurant wine grape, producing wines that drink well young, with piquant, punchy fruit, high acid, low tannin and rich color.
Aromas include black cherry, cedar, plum & prune, rosemary, salted toffee and tobacco. Palate shows the same. The wine is medium-bodied and dry.
This is great pizza and pasta wine. It’s relative lack of bitter tannin and high acidity plays nicely with tomato-based sauces, cheeses and meats.
Vintage is 2018.

This Cabernet Sauvignon is from Alexander Valley, Sonoma County,.
This wine is made in a rustic style. Farming is biodynamic, which in short is a holistic, ecological and ethical approach to farming that relies on composting, animal labor, cover cropping, crop rotation, natural remedies.
Tasting notes: Coffee bean, dark chocolate, cedar, salted plum, current, eucalyptus, mint.
Oak usage her is balanced and does not overpower the wine.
Generally speaking, Cabernet Sauvignon produces wines defined by higher tannin, medium+ acidity and a fair bit of structure. Typical fruit profile is currant, plum, smoke, black pepper, green pepper, plum. At times also green aromas and flavors of eucalyptus, mint, bell pepper and green peppercorn depending on climate and weather.
Food pairings are definitely meat, preferably red. Beef is good with Cabernet. Lamb is better.
Vintage is 2015.

Nobili Nebbiolo from Valtellina in Lombardia, 2013 vintage.
Nebbiolo is called “chiavannasca’ in the local dialect. “Inferno” is the name of a subregion within Valtellina, known for producing complex and spicy wines with bright uplifted fruit notes and floral flavors. Valtellina is an extremely steep and difficult land to work vineyards, often requiring trams to reach the top of vineyards, which cannot be tended with machinery and where work is done by hand.
Nebbiolo from Valtellina is defined by aromas of candied red cherry, cinnamon, rose, ginger and potpourri.
Pairings are to food that require some weight and tannin plus acidity: fatty cuts, hard cheeses, salty meats.
