Describe the Mushroom Pizza
Cremini, Oyster, Beech and Maitake mushrooms roasted with thyme and garlic. Pizza is dressed with mushrooms and topped with a lemon cream (cream, lemon zest, white wine, garlic, shallot) mozzarella and parmigiano, baked and topped with fresh parsley.

Pizza Dough Ingredients
Caputo pizza flour, Sir Galahad flour, fresh yeast, 12 year old starter from Rome, sea salt, EVOO and water.
Each pizza dough portion is 350 grams.
Our dough is rested to ferment for 48 hours in the fridge which leads to wonderful, complex flavors and an easier to digest product.

Describe the Sausage & Rapini Pizza
