A

Thin, hand cut ribbon pasta (semolina and “00” flour, egg yolk, salt). Tossed with butter, minced black truffle, and pecorino tartufo cheese (a black truffle pecorino from sheep’s milk). Shaved black truffle on top.

A

Spaghetti with garlic and olive oil. House made spaghetti (semolina flour and water), toasted garlic, red chili flake, lemon juice, parsley, and topped with fried garlic chips. Manila clams can be added as a supplement.

A

House-made fusilli (spiral shaped pasta made with semolina flour and water) is tossed with an arugula / pistachio pesto. The pesto is arugula, basil, parsley, pistachio, lemon zest, Parmigiano-Reggiano, roasted garlic and EVOO. Garnished with pistachio breadcrumbs.

House-made rigatoni pasta is made with kale and spinach to dye it green. This pasta is then tossed with a mushroom ragu (mistake mushrooms, brown beech mushrooms, cremini mushrooms, oyster mushrooms, porcini mushrooms, white wine, brown butter and sage)
