What is a Nightshade Allergy?

A

This is an allergy to some or all of the fruits and vegetables that are part of this family of plants. It includes tomatoes, eggplant, spicy peppers, bell peppers and strawberries as the most common foods.

What is a Dairy Allergy?

A

This most commonly refers to an allergy to lactose, a sugar found in cow milk and all derivatives thereof (butter, cream, sour cream and cow’s milk cheeses). Goat milk and Sheep milk do not have lactose.

What is a Nut Allergy?

A

This allergy refers to tree nuts, including almonds, cashews, hazelnuts, Brazil nuts and walnuts as the most common. It does not refer to peanuts, which are a legume and a separate allergy, and also does not refer to pine nuts, which fall into the seed allergy category.

A

What is a Seafood Allergy?

A

An allergy to some or all types of seafood. This includes fresh and salt water fish and shellfish. Some people are allergic to fish and not shellfish, or vice versa. Fish sauce, miso soup (Bonito flake is dried fish and an ingredient in traditional miso soup.), caviar, uni, and other seafood derivatives fall into this category.

What is an Egg Allergy?

A

This is specifically an allergy to bird eggs, including Chicken, Duck and Quail, but check with your guest to learn the specifics of their allergy. Eggs are used as a binding agent in many forms of cooking, in breading, sauces such as Hollandaise, in mayonnaise, aioli, and baked goods.

What is a Gluten Allergy?

A

This is an allergy to Wheat Gluten, which is a molecule that binds to water molecules and makes bread dough stick together. It is found in wheat, barley (farro), rye, and in trace amounts in oats, millet and amarynth. Other types of starchy grains such as rice and quinoa do not have gluten. This allergy is also referred to as Celiac’s Disease or a Gluten Intolerence, which is an irritation of the lining of the small intestine by Gluten molecule, causing extreme pain. Fried foods that are fried in the same oil as breaded items may not be suitable for Celiac’s people to eat, depending on the severity of their allergy. Please caution them to make them aware.

What is a seed allergy?

A

This allergy is to seeds, which can be particularly hard to avoid. It can include seeds of all types, such as poppy, sesame, pine nuts (pignoli), flax seeds, and the seeds of fruits and vegetables that may by accident end up in food, such as the seeds of tomatoes or peppers. Ask your guests if it is all seeds that they need to avoid or just specific types. Any oils from seeds, such as cottonseed oil, sunflower oil, canola oil, sesame oil are also necessary to avoid.

Define a Pescatarian.

A

A Pescatarian does not eat the meat of land animals. This includes Cows, Pigs, Sheep, Goats, Birds, and any exotic animals that also breathe air. Frogs, Snails and other amphibious and reptilian species also fall into the in-edible category for a Pescatarian. However, they DO EAT seafood, shellfish, eel and any other fully-aquatic species, animal byproducts such as milk, cheese, honey and usually eggs.

Define a Vegetarian.

A

When you encounter a vegetarian, it’s useful to ask if they eat eggs or dairy products. Not all vegetarians eat to the same specifications.
Lacto-Ovo Vegetarian does not eat meat but does eat eggs, milk, cheese and other products made from milk and eggs..
Lacto Vegetarian does not eat meat or eggs but does eat milk, cheese and other products made from milk.
Ovo Vegetarian does not eat meat or dairy but does eat eggs and other products made with eggs.
Some vegetarians do not eat meat, eggs, or dairy, but do eat honey, so they will define themselves as Vegan or as “mostly vegan”

Define a Vegan.

A

A Vegan is a person that does not eat any animal products or byproducts, including all land and sea animals, eggs, dairy, and honey made by bees. This can also be defined as a “plant based diet.” This diet is extreme, and some vegans will ask for vegan cocktails, beers, and wines in addition to foods. (We can help! Ask a manager to help with this guests specific needs if you need beverage advice.)
