Describe the Ricotta Hotcakes.

A

Fresh ricotta mixed with egg yolks, milk, whipped egg whites, sugar, flour and salt, as the pancake batter. The batter is cooked to order and topped with fresh banana, “honeycomb butter” (sugar cooked to a dark caramel then baking soda is added to allow the caramel to turn into “honeycomb”. This is cooled and then mixed with whipped butter and Nutella.

‘Special Sauce’-Ketchup, Mustard, Sweet Relish, Capers, Onion Confit, Kewpie Mayo,Grilled Onion with Caciocavallo Fonduta
(Milk, Cream, Caciocavallo cheese, Pecorino Romano, Butter, Salt and Pepper) This is all cooked together until it makes a cheese sauce.

Served on Martin Potato Roll
