Carbonic maceration

A

In crushed grapes in vats filled with carbon dioxide and grapes at the bottom are crushed by the weight of grapes on top. As more CO2 is produced from fermentation it envelopes all grapes and fermentation continues inside the whole grape. They burst releasing juice until all fermentation of sugar is complete and wine is pressed
