7
Q

Describe Speyside as a region, as you might table side.

A

Speyside is home to over half of Scotland’s distilleries, with 50+ currently operating.
There’s a stylistic range that makes the region hard to define, but you’ll generally find sweet single malts here.

Light and floral, heavy and sherried… and exceptions abound, peaty as well. Some of the most famed distilleries here include Glenlivet, Glenfiddich and Macallan.. although Macallan still labels as Highlands.

Q

Describe the region of Campbeltown, as you might for an inquiring guest.

A

This was once the Scotch whisky capital, with over 30 operating distilleries in the 19th century. Two world wars and a depression took its toll… Spingbank and Glen Scotia were the only 2 distilleries that operated into modern times, with Glengyle reopening in 2004.

Typically saline, fruit and grass driven with moderate peat aromas.

20
Q

Describe the Lowlands region as you might to a guest.

A

This is the region closest to England. After hardship and depression, only 3 distilleries made it to the modern era.

The Lowlands are characterized by a very light and floral style, typically without any peat. Reflecting proximity to England, triple distillation was historically the routine. These are the “aperitifs” of Scotch whiskies.

Q

Describe the Highlands region of Scotch production, as you might to a guest.

A

This is the 2nd largest region, by density of distilleries. Because of the range, a style is hard to generalize. The western distilleries tend to be lightly smoked, the north are spicy and salty and the south & east are light and sweet.

The SWA includes the Islands region as part of the Highlands, although many consider it separate.

What does barrel or cask strength mean?

A

That the spirit has not been diluted following the aging process, which will usually result in a higher ABV.. typically 58% to 66%

59
Q

What does bottled-in-bond mean?

A

The spirit has been aged according to the rules set by the Bottled-in-Bond Act of 1897. The whiskey is distilled in its entirety by a single distiller in a single American distillery within the course of a single year.

It must also go through a four-year aging process under government supervision in a federally-bonded facility (a warehouse owned and operated by the State). And finally, it must be bottled at 100-proof — or 50% alcohol by volume.

60
Q

Explain as you might to a guest: what does it mean if something is “peated”?

A

Peat is a brown, soil-like deposit typical in boggy regions - like Scotland! Used for centuries like coal, peat fires were used to malt barley which would impart a very characteristic smoky flavor and aroma

61
Q

What is a sour mash?

A

Mash is the generic term for the crush malt or grain steeping in hot water, soon to become alcohol. With a sour mash, typical to TN, a small portion of used mash is added to the fresh mash kind of like a sourdough starter

62
Q

What is a sweet mash?

A

Mash is the generic term for the crush malt or grain steeping in hot water, soon to become alcohol. With a sweet mash, fresh yeast is used for the fermentation

63
Q

What does it mean if a whiskey is “straight”?

A

Every type of American whiskey can be defined as straight. The whiskey must be at least 2 years old and if younger than 4… carry an age statement. No coloring or flavorings allowed.

64
Q

What does it mean if a whiskey is “wheated”?

A

The whiskey will have used wheat as to soften and sweeten the flavor, by adding some wheat in place of a portion of barley, but it will still remain a second or minor ingredient

69
Q

What is Canadian Whiskey like, speaking generally? Give a few examples of Canadian whiskey.

A

Canadian Whiskey are typically blended grain with a large percentage of corn, making for a lighter, smoother style of whiskey. Most do contain a bit of Rye, although.. to be called “Canadian Rye” it must simply have the look, taste and feel with none of the rules about how much rye is included.

Examples: Crown Royal, Canadian Club, Seagram’s

70
Q

If a bottle of whiskey is labelled with an age statement, what does that mean?

A

The age statement refers to only the age of the youngest whiskey used in the blend. So in practice, there could be some older whiskies in there as the blender is striving for a specific flavor profile
