Due to the strong hydrogen bonds, present in water, alot of energy is requires to break these bonds, and turn it into water vapour.

during hot weather, some animals and plants, use this property to reduce their temperature.
animals release sweat through their skin, and then the animals heat, turn the water into water vapour. This has a cooling effect on the animal.
