A
  1. Vin Santo DOC
  2. Recioto di Soave DOC
  3. Recioto della Valpolicella DOC

A

Match the weight of the dessert and the wine.

33
Q

Fill in the blank.

When pairing sweet wine with food, the wine should be _______ than the dessert being paired.

A

sweeter

Don’t agree? Try this at home: try pairing a still table wine (e.g. Pinot Grigio, Albariño) with any sweet dessert and feel your palate turn inside out.

34
Q

What’s a good way to show off the sweetness of a dessert wine while matching the body of the food?

A

Contrast sweet wines to fatty and salty foods such as foie gras and blue cheese.

35

Something super interesting about sweet wines is that when they become really old, the wines become _______ over time.

A

37
Q

A

full-sized bottles

38
Q

Fill in the blank.

Tokaji is often bottled in ____ml bottles.

A

500ml

39
Q

How do you calculate the price of a glass or the cost % of a glass of wine?

Your BTG cost % should be around 17%.

A
  • Figure out the cost per ounce.
  • Multiply that cost per ounce by how many ounces you plan on serving as BTG (e.g. 2, 3, or 5oz).
  • Divide that number by your proposed glass price to get to your cost %.

EXAMPLE: A bottle of wine wholesale costs you $7.33. Divide 7.33 by 25.4 to get the cost per ounce ($0.29). Times .29 by 5 (assuming you’ll be pouring a 5oz pour) and you get $1.44. To get the cost %, divide 1.44 by the price at which you’d like to sell the wine (if you want to sell that $7.33 bottle at $11/glass, you’ll achieve a 13% cost, which is great).

Be sure to pay attention to the format size! Do not price a wine BTG based on 750ml if the wine comes in 375ml bottles
