Q

Describe Vin Jaune production.

A

Savagnin grapes are late harvested, fermented and then left un-topped-up, in old Burgundy barrels for at least 6 years. As the wine evaporates, the surface develops a film of yeast not dissimilar to flor of the Jerez region. Resulting taste is similar to Fino Sherry. Vin Jaune is bottled in a 62cl Clavelin.
