Give a short description of the Tokaji Aszú production.

A

After harvest unaffected grapes are fermented to create a base wine. Aszú berries are in the meanwhile stored in a dry environment. Then the Aszú paste is added to base wine and the paste soaks for one to five days. Then the liquid gets pressed and fermentation starts. The level of sweetness is traditionally measured by the amount of puttonyos (25kg baskets) added to the base wine in a 136L gönci.
