Caesar Salad
Green baby gem lettuce tossed with house made Caesar dressing and topped with “Parmesan Breadcrumbs”.
What is in the Caesar Dressing?
Egg yolk, garlic, anchovy, Dijon mustard, Worcestershire, red wine vinegar, lemon juice, oil, parmigiano reggiano and creme fraiche.
What’s in the “Parmesan Breadcrumbs” on the Caesar salad?
Panko breadcrumbs, butter, parmigiano reggiano, oregano, salt and pepper.
Insalata Verde
Baby gem, butter lettuce, and endive tossed with a chive green goddess dressing. Garnished avocado and more chives.
What is an endive?
It is a bitter leaf vegetable.
What is in the “Chive Green Goddess Dressing”?
Buttermilk, red wine vinegar, oil, egg yolk, salt and chives.
Castelfranco Radicchio
Castelfranco radicchio dressed with a robiola vinaigrette. Finished with a drizzle of honey and toasted hazelnuts.
What’s in the robiola vinaigrette?
Robiola cheese, sherry vinegar, shallot, oil, sugar, lemon juice, salt and pepper.
Arugula Salad
Wild, baby, and whole leaf arugula mixed together and dressed with a Pear Vinaigrette. Topped with poached pears, toasted walnuts, and ricotta salata (ricotta that’s been salted, pressed and aged).
What is in the “Pear Vinaigrette”?
Pear cooking liquid, lemon juice, EVOO and salt.
What does “Poached” mean? And what are the pears poached in?
Poaching is a cooking technique that involves heating food that is submerged in a liquid.
Our pears are poached in white wine, honey, cinnamon, star anise, bay leaf and thyme.
