Spaghetti
Classic garlic and oil pasta made with house made spaghetti, toasted garlic, red chili flake, lemon juice, parsley and topped with fried garlic chips. Marinated shrimp can be added as a supplement.
What is the “Marinated Shrimp” marinated with?
Garlic, oregano, EVOO, and lemon zest.
Canestri
Canestri pasta tossed with house made vodka sauce. Finished with basil and parm.
What is “Canestri” pasta?
It is basket-shaped pasta.
How is our vodka sauce made?
Tomato, garlic, onion, mascarpone, cream, parmigiano, Calabrian chili, chili flakes, liquid aminos, butter, and vodka.
Cacio E Pepe
Classic Roman pasta made with butter, black pepper, and pecorino Romano. Tossed with Bucatini pasta.
What is “Bucatini” pasta?
Thick spaghetti-like pasta with a hole running through the center (hallowed).
Fusilli
House made fusilli tossed with an arugula & pistachio pesto and butter. Garnished with grated parmigiano reggiano and pistachio breadcrumbs.
How would you describe “Fusilli” pasta?
They are spiral shaped pasta.
What’s in our ‘Arugula & Pistachio Pesto” sauce?
Arugula, basil, parsley, pistachio, lemon zest, parmigiano reggiano, roasted garlic, and EVOO.
Ricotta Cavatelli
Ricotta cavatelli pasta (shell-shaped) tossed with a sausage and broccoli ragu.
What is a ragu? And how is ours made?
A ragu is an Italian meat sauce that is common served with pasta. Ours features Italian sausage that has been cooked in white wine, chicken stock, onions, garlic and bay leaves. Finished with butter, pecorino Romano cheese, and fennel pollen.
Lobster Fra Diavolo
Half of a 1.5lbs lobster is cooked in lobster stock, tomato sauce, Calabrian chili, butter and basil. This is tossed with Chitarra pasta made with squid ink.
What is “Chitarra” pasta?
It is thin, square-shaped spaghetti that is named after the wood tool that is used to cut the pasta.
Tortellini Pomodoro
Egg yolk pasta is filled with buffalo milk ricotta, lemon zest, salt and pepper. Hand folded into a tortellini and glazed with pasta water, butter and parmigiano reggiano. Plated atop of our house made Pomodoro sauce.
