What is puccia? Describe ours.
Traditional hearth-baked break from Pugglia, Italy. Ours is made using the house pizza dough, cooked in our wood fired oven, coming out puffed & slightly blistered. Finished with EVOO and sea salt.
Whipped Eggplant
Eggplant cooked in olive oil & garlic until soft. Pureed until smooth. Creme fraiche is whipped then folding into the puree. Seasoned with salt & garnished with EVOO.
What is Stracchino Cheese?
It is similar to crescenza. Cow’s milk cheese typically eaten young. Soft, creamy texture. Mild, slightly acidic flavor.
Whipped Stracchino
Stracchino cheese whipped with ricotta until smooth. Seasoned with salt, garnished with EVOO and a fig vin cotto.
What is Fig Vin Cotto?
It is reduced grape juice seasoned with figs.
What is Burrata?
Cow’s milk cheese made with mozzarella curd & cream
Describe the Burrata and Caviar
4oz Burrata cheese served with 1oz of caviar. Served table side and garnished with chives, sea salt, black pepper and EVOO.
