Advantages and disadvantages of Hand harvesting and pressing whole bunches

A

Advantages:
* Less stressed grapes during
harvesting ->especially if picked at
coolest time
* Fruit can be sorted in vineyard
* Whole bunch pressing is gentler,
extracting fewer solids and phenolics
* More juice is produced at lower
pressure due to presence of stems
which create channels for juice

Disadvantages
* req large, well trained, picking teams to harvest and select correctly
* difficult to find + retain such labour
* Labour may not be available in early morning
* Hand harvesting more exp + slower
* Whole bunch pressing more time
consuming -> fewer bunches can be
loaded into press

Advantages and Disadvantages of Machine harvesting and short maceration
or hold in press

A

Advantages (harvesting):
* Fast
* cheaper
* no need for large picking teams
* Grapes can be picked at night for cooler
temp
* Shortest possible delay between picking
and refrigeration and/or pressing

Disadvantages:
* Machine harvesting requires an up-to-date, well-maintained machine and a skillful driver
* Grapes are destemmed by shaking
mechanism of the machine ->
therefore whole bunch pressing not
possible
* Destemmed grapes require higher
pressure to extract same amount of
juice as whole bunch pressing
