Red meat inspection Flashcards
Give examples of generalised conditions that make meat unfit for human consumption
Septicaemia
Pyaemia
Jaundice
Emaciation
Viraemia
Malignant tumours (sporadic bovine lymphosarcoma)
(Toxaemia - depending on boiling/frying test)
What is the most common malignancy in cattle?
Sporadic bovine lymphosarcoma
What age cattle does sporadic bovine lymph affect?
6 months - 2 yrs
What are the 2 forms of sporadic bovine lymphosarcoma
Multicentric (LNs)
Thymic (cardiac and cervical thymus)
What should be done if an animal at a slaughterhouse is suspected to have toxaemia?
Hold carcass for 24 hrs
Check by boiling/frying test - if smell still present, unfit for human consumption
Is Erysipelothrix rhusipathiae zoonotic or notifiable?
Zoonotic
Not notifiable
Mild Erysipelothrix rhusiopathiae causes diamond shape lesions on the skin and possible bacteraemia. What causes these changes?
Necrosis/infarction
Are pigs with Erysipelothrix patrias accepted or rejected at the slaughterhouse?
If acute or septicaemia - total rejection
If mild or chronic - local or total rejection depending on severity and extensions of lesions
What are 2 possible causes of orange pigment of a carcass?
Jaundice - hyperbilirubinaemia
Carotenosis - icncreased XS/dietary carotenoids
Is an animal with jaundice fit for human consumption?
No
