U8 shrimp. Cooked in a court bouillon( white wine, onions, lemon, and celery). Served cold with cocktail sauce, Tabasco, and a lemon wedge

Served with cocktail sauce and dijonaise
Dijonaise: Dijon mustard, mayo, lemon juice

East coast (malpeque, blue point, etc,) West Coast( kumamoto, fanny bay, etc)
Served with cocktail sauce (ketchup, Worcestershire sauce, Tabasco, lemon juice, and horseradish) and Mignonette ( red wine vinegar, sheet vinegar, shallots, and black pepper.
