Tuna TarTare
3oz sushi grade tuna - hand chopped
Seasoned with salt, pepper, and olive oil.
Served atop of diced avocado mix that includes jalapeño, lemon juice, salt, and black pepper.
Garnished with soy-mustard emulsion and taro chips.
Soy mustard: soy sauce, Dijon, honey, yuzu juice
Seared foie Gras
3oz of foie gras seasoned and seared. Plated with huckleberry pancakes, kumquat marmalade, ginger snap crumbs and a spiced rum citrus reduction.
Pancakes: flour, baking soda, baking powder, butter, sugar, eggs, vanilla, buttermilk whites, milk, huckleberries
Kumquat marmalade: kumquat, orange segments, honey, vanilla bean, sugar, lemon juice.
Ginger snap crumbs: dark brown sugar, butter, eggs, fresh ginger, Leno. Zest, flour, ground ginger, ground cinnamon, baking powder, ground cloves
Spiced rum citrus reduction: Orange juice, pineapple juice, spiced rum
Lil BRGRs
2-2oz Wagyu beef patties, Gouda cheese, special sauce, on a black sesame seed bun
Special sauce: ketchup, mayo, pickles, shallots, chives, truffle oil, lemon juice, salt, and pepper, (Russian dressing)
Beef Tartare
2.5 oz of diced raw beef (filet) mixed with shallots, capes, parsley, chives, lemon zest, yuzukosho aioli (Japanese chile citrus paste), and evoo. Served with pickled honshemiji mushrooms, shaved radish and papadum crackers

Fresh Fluke is seasoned and sliced.
Fish is rolled in green apple. Roll is sliced. The fish is garnished with pickled fennel, hearts of palm and grain mustard sauce.

1 - 4oz lobster tail split and coated with puffed rice flakes served with a green papaya salad dressed in a Vietnamese style dressing (fish sauce, lime juice, rice vinegar, garlic) cilantro, mint, thai basil, carrots, pickled Fresno chillies and a green Tabasco aioli

Grilled Scallops
2 u10 scallops seasoned with fennel pollen and paprika and grilled. Served with fresh garbanzo hummus
