PROTEIN Flashcards
What are the two types of protein?
Dispensable and indispensable.
Explain dispensable amino acids?
can be synthesized in the body by converting one amino acid into another.
Explain indispensable amino acids?
essential, have to be described by the diet.
What is the protein cycle?
protein foods eaten - proteins are hydrolyzed producing amino acids - amino acids recombine to form new proteins.
What is biological value?
It is the protein quality of a food.
What are the functions of protein?
body structure, formation of enzymes, homeostasis (maintaining a constant internal environment), transport, blood clotting, energy, hair nails and bones,
Explain nitrogen balance?
Nitrogen balance is the difference between nitrogen input and output its the overall indicator of protein metabolism in the body.
What are novel sources of protein?
mimic sensory properties of meat and used to replace meat.
Explain TVP?
low saturated fat, high HBV, fibre, iron, calcium, low GI.
Explain Quorn?
low in saturated fat, HBV, fibre, iron, sodium, calcium.
One gram of protein contains how much energy?
4kcals
