Explain the structure of fat?
one molecule of glycogen linked with 3 fatty acids, 3 fatty acids can be the same but usually contain 2 or 3 different fatty acids.
What are the two types of fat?
Saturated and unsaturated.
Explain saturated fat?
hydrogen chain is saturated with hydrogen, (no missing H from the chain).
Explain unsaturated fat?
hydrocarbon chain is not fully saturated with hydrogen and therefore has one or more double bonds.
What are the two types of unsaturated fat?
mono - more than one double bond.
poly - more than one double bond - omega 3 and 6.
double bond arrangements may vary what are the two types?
cis (same side) trans (opposite sides)
What are the functions of fat?
concentrated source of energy, part of the cell membranes, fat soluble vitamins, digested slowly, isolation and protection.
What are sources of saturated fat?
butter, lard and confectionary.
What are the government recommendations for saturat3ed and unsaturated fat?
35% unsaturated, 10% saturated.
What are sources of monounsaturated fat?
olive oil, rapeseed oil, ground nut oils, avocado.
What are the functions of monounsaturated fat?
lower LDL cholesterol, increases HDL
What are the sources of omega 3?
oily fish, cod liver oil, walnuts and soya oil.
What are the functions of omega 3?
Forms part of the structure of the cell membrane, body maintenance, growth, fighting disease, nervous system, anti inflammatory, EPA and DHA, prostogladin synthesis.
What does EPA do?
prevents blood clotting - reduces CVD/stroke
What does DHA do?
important for babys brain and eye development.
