Reds are made in one of two ways:

- Maceration on the skins during alcoholic fermentation (5-7 days)
- Moderate fermentation temperatures (17-20°C/63-68°F)
- Briefly aged in Stainless Steel or neutral oak
- More premium reds have a period of extended maceration after alcoholic fermentation (7-14 days)
- Warm fermentation temperatures (26-32°C/79-90°F)
- Typically aged in small oak barrels, with some portion being new oak
