  • Most reds are made to be fruity and fresh
  • Maceration on the skins during alcoholic fermentation (5-7 days)
  • Moderate fermentation temperatures (17-20°C/63-68°F)
  • Briefly aged in Stainless Steel or neutral oak
  • More premium reds have a period of extended maceration after alcoholic fermentation (7-14 days)
  • Warm fermentation temperatures (26-32°C/79-90°F)
  • Typically aged in small oak barrels, with some portion being new oak
