From 22 year old vines planted on red slate facing south. Grapes are hand-harvested in early October and partially selected at the time. Fermentation takes place in stainless steel for seven weeks and spends time on the lees until January.

From 22 year old vines planted on gray slate and facing south, the grapes are hand harvested in early October with partial selection. Fermentation takes place in stainless steel for nine weeks and the wine rests on its lees until January, no battonage.
