Why do lipids not dissolve well in water?
They are hydrophobic molecules
What is a fatty acid?
Molecule composed of a carboxylic acid and a hydrocarbon chain often 16-18 carbon atoms long: can be “saturated” or “unsaturated” in form.
What reaction is used to join fatty acids to glycerol?
Ester linkage
What reaction removes a fatty acid from glycerol?
Dehydration reaction
What is a Saturated fatty acid?
is a fatty acid that does not have any double bond between the carbon atoms in the carbon skeleton. C fully “saturated” with H atoms. Solid at room temperature. example butter.
What is a Unsaturated fatty acid?
is a lipid one or more double bonds between carbon atoms. Produce a kink in the molecule. Liquid at room temperature. Example Olive oil.
What does CIS do?
Produce a kink in the molecule, kink prevents fatty acids from packing tightly.
What do TRANS do?
does not produce kink bond which allows for a more dense arrangement.
How do phospholipids differ from triglycerides?
Triglycerides are three fatty acids connected to glycerol. While phospholipids changed out one of those three for a phosphate group. They make up the cell membrane wall that has hydrophobic & hydrophilic.
What important property of phospholipids allows them to form bilayers in aqueous solutions?
amphipathic
Why is cholesterol considered a lipid?
It has a fatty acid chain & polar component
What functions do sterols play in living organisms?
- Converted into testosterone & estrogen.
