Describe Sobremadre

A

Once fermentation is complete, a minimum of 25% of the solids remain with the unfiltered wine or “sobremadre” (with the mother) for 90-180 days. Wines are bottled directly from the fermentation vessel without clarification or filteration. A bit of carbon dioxide remains in the solution leavinmg the wines slightly effervescent. Any and all authorizied grapes can be vinified this way to craft Vinos Blancos, Rosados and Tintos.
