Ferm Dry / Off Dry

Lambrusco Grasparossa - Considered Highest quality Clone
Hi Colour, Hi Body, Hi Acid, Highest Tannin of all clones HI Alc when ferm Dry

Basic Level - Grapes from wide Area
All Clones permit + up to 15% local Vars Hi Ylds = Poor Flav Conc
Med Ruby, S’berry, R Cherry, Fruity, Fragrant - Fruity + Simple

1970 Lambrusco Salamino di Santa Croce DOC
From NW Sand+Clay, Min 90% Salamino + 15% Local vars
GOOD Colour, Body, Tannin, Acid.
Fruity + Fragrant often Off Dry to balance structure - Simple but Elegant

1970 Lambrusco di Sorbara DOC
Grown Mainly Sandy, Clay+Sand on Hills
Min 60% Sorbara + up to 40% Salamino
Lower Tannin than pure Salamino But GOOD Colour + Acid Dry/Off Dry
From Flat Sand - Dry, Fruity, Fragrant = Early Drink
From Hills - More Structure, Tannin, Acid = Off Dry to Offset Tannins
