NW Italy, 52 Communes in Piemonte Asti + Cuneo = 85%
DOCG 1993
One of largest DOCG producing areas in Italy - 85 Million bots
Major Exports - EU + USA
Large Producers + Co-ops dominate:
Martini-Rossi, Grupo Campari, Gancia
Very pale Lemon, Pronounced Orange Blossom, Peach, Grape, can be Confected. Low~Med Acid, Dense Mousse, Med Body, Med Intensity Can have a short sugary Finish

Asti Method - Variation on Tank/Martinotti Meth - Only 1 Ferment
Made as Req’d Must stored 0c, warm, add yeast, part way trap Co2, when abv% reached, chill, filter + bottle
MUST spend min 1 month in Autoclave (trap bubbles)
Law - 7~9.5% abv 5~6 Bar
Made Extra Dry ~ Dolce
